Bite Size Brownies

1/2 cup (125 mL) butter
4 oz (115 g) semi-sweet chocolate
2 eggs
3/4 cup (175 mL) sugar
1/2 cup (125 mL) Five Roses® All Purpose White Flour
1/4 cup (50 mL) cocoa powder
1/4 tsp (1 mL) salt
1 cup (250 mL) chocolate chips (semi-sweet, milk and white chocolate)
36 mini cupcake liners

  1. Preheat oven to 350°F (180°C). Line mini muffin pans with paper liners.
  2. Melt butter and chocolate together in a small saucepan. Reserve.
  3. Beat eggs and sugar until creamy in a medium bowl, using a hand held whisk. Fold in melted butter and chocolate. Add flour, cocoa and salt. Stir in chocolate chips.
  4. Spoon batter into prepared muffins cups.
  5. Bake in preheated oven for 12 to 15 minutes or until the tops are firm to the touch.
